Cinnamon Scones

I’ve made this recipe twice in the last two weeks as a quick and easy snack for guests.

Cinnamon Scones
– 2 cups self-raising flour
– 1/3 cup sugar
– 1 tsp cinnamon
– 1/2 cup butter
– 2/3 cup milk
– 1 egg, slightly beaten
– 1 tsp vanilla

1. Preheat oven to 200 degrees celsius
2. Blend together flour, sugar & cinnamon
3. Cut in butter & mix by hand until all butter is broken up
4. In a separate bowl, mix together milk, egg & vanilla
5. Add liquids to flour mixture & mix well (mixture will be very soft)
6. Use two dessertspoons to spoon balls of mixture onto baking tray
7. Brush lightly with milk & sprinle with raw sugar
8. Bake for 10-15 mins or until lightly browned & cooked through
